Product Description

Derived from the full loin of the beef hindquarter, the short loin is home to some of the most desirable cuts of beef. It consists primarily of two muscles, the strip loin and the tenderloin separated by a telltale T-shaped bone. The short loin may be crafted into porterhouse, T-bone, strip, and tenderloin steaks.
