  • For uniform presentation, this veal is center-cut in two-inch slices, from the midsection of the strip loin muscle.
  • This cut is ideal for the Italian dish, which features veal braised with vegetables, white wine and broth. Salt the veal first to tenderize it, and add tomatoes to the dish as desired.
  • Bone-in veal provides better plate coverage and great flavor.
  • USDA Choice veal is juicier and more flavorful than lower grades, and it tends to be lighter in color.
  • These 16-to-18-ounce veal cuts are individually packaged and frozen. Each 11-pound case yields 10 slices.
