Product Description
- A staple of Mediterranean and Middle Eastern cuisine, these lamb hind shanks are masterfully cut. There are many applications for this item. A simple roast leg of lamb can be accessorized with an herb rub, a sauce can be made with the pan's drippings and lamb stock or wine, or the finished roast can be partnered with a classic mint sauce.
- These hindshanks are USDA Choice, which is a high USDA grade with ample marbling, and it's quite tender, juicy and flavorful.
- The hind shanks are excellent when braised or stewed. Season the hind shanks and brown them well. Saute onions and carrots and add the lamb, red wine, stock and tomato puree. Braise for 1 1/2 - 2 hours or until the lamb is tender.
- Cook lamb with Greek flavors. Season with salt and pepper and marinate the hind shanks in olive oil, oregano, lemon juice and garlic. Broil the lamb, turning once until they reach 135 degrees Fahrenheit for medium. Remove from the heat and let rest before serving. Accompany lamb with lemon, smashed potatoes and Greek salad with feta.
