Product Description
- Derived from the upper forequarter of beef, this fresh USDA Choice whole beef ribeye is rich and tender as well as well-marbled and juicy. It is provided bone-in for better plate coverage and great flavor. It is cut from the ups, a heavier subprimal that offers thinner steaks, enhanced plate coverage and faster cook time. The lip-on beef is wet-aged a minimum of 21 days.
- The loin is great for roasting whole for an upscale look for special events and menus. It can also be portioned between the bone to make chops that can be prepared individually on the grill or in the broiler. The loin can be cut into pork chops, country ribs and sirloin chops, and it contains the pork tender.
- The frenched process exposes part of the rib bones by cutting off the fat and meat for an elegant presentation. The chine bone is removed so it's easier to cut between the ribs.
- For easy handling, the loins are packed individually. There are two, five-pound-average loins per case.
- No hormones added: Federal regulations prohibit the use of hormones in the raising and production of pork or poultry.
