Product Description

  • The eye of round is cut from the round primal and may include the knuckle (sirloin tip), depending on how the round is separated from the loin. This lean cut comes from the finest corn-fed Angus cattle to offer a rich, full beef flavor and is best prepared using slow, moist-heat methods including braising, to tenderize the meat and maintain moisture.
  • USDA Choice is a high USDA grade, with ample marbling, and it is quite tender, juicy and flavorful.
  • Can be successfully grilled or smoked to be able to offer different applications and flavors. An economical cut to use, it makes good roast beef for traditional dinner with mashed potatoes and gravy or sliced thinly for a roast beef sandwich.
  • Allow the roast to come to room temperature before cooking it. Season with salt and pepper, rub with olive oil and add garlic and rosemary to the pan. Cook at 400 degrees Fahrenheit, basting regularly. Reduce the temperature to 350 degrees and cook to an internal temperature of 125 - 130 degrees. Let it rest for 20 minutes and slice to desired doneness.
