Product Description

  • USDA Choice is a high USDA grade, with ample marbling, and is quite tender, juicy, and flavorful
  • Deckle-off indicates hard fat and intercostal meat are removed, for reduced prep time when braising
Derived from the lower forequarter of beef, brisket is highly prized for its beefy flavor, though its true tenderness potential is achieved only when cooked slowly at a low temperature for many hours. These briskets consist of the flat portion of the muscle only; the point has been removed. It is frequently used for pot roast, barbecue, corned beef, and slicing for sandwiches. Brand may vary.
