Prepare your Dot Cakes

1. Bake the Base (The Cupcake Method)

To make assembly incredibly fast and perfectly portioned, you’ll want to bake these as large cupcakes.

  • Preheat your commercial convection oven to 325°F (163°C).

  • Line a standard muffin/cupcake tin with paper liners.

  • Fill the cupcake cavities nearly to the top (about ¾ full). You want them to bake up thick and tall so they fill out the dessert cups nicely.

2. Slice and Layer (The Double-Frosting Step)

  • Using a serrated knife, slice each cupcake horizontally right through the middle to create two even layers (a top half and a bottom half).

  • Place the bottom half of the cupcake into the bottom of the Cup.
